Follow The Directions

01

Step

Prepare the Tomatoes: Fill a large bowl with ice and cold water. Score a small 'x' on the bottom of each tomato. (5 minutes)

02

Step

Blanch the Tomatoes: Bring a large pot of lightly salted water to a boil. Add tomatoes to the boiling water and cook for 30 seconds, until the skin starts to peel. Remove with a slotted spoon and transfer to a colander. Immediately immerse in the ice water for several minutes to halt the cooking process. (2 minutes)

03

Step

Peel and Chop: Drain the tomatoes, peel off the skin, and chop coarsely. (5 minutes)

04

Step

Create the Ramp Sauce: Combine the chopped tomatoes, ramps, capers, and 2 tablespoons of olive oil in a blender. Blend until smooth. Season to taste with salt and pepper. (5 minutes)

05

Step

Cook the Pasta: Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook, stirring occasionally, until al dente (about 11 minutes). (15 minutes)

06

Step

Sauté the Bacon: Meanwhile, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped bacon and cook, turning occasionally, until crispy and golden brown (5-10 minutes). (10 minutes)

07

Step

Combine and Simmer: Add the tomato-ramp mixture to the skillet with the bacon. Cook until heated through, about 1-2 minutes. Stir in 1-2 tablespoons of the pasta water to create a light, emulsified sauce. Season with salt, pepper, and a pinch of sugar, to taste. (5 minutes)

08

Step

Combine Pasta and Sauce: Drain the cooked penne and add it directly to the skillet with the sauce. Toss to coat thoroughly. (2 minutes)

09

Step

Serve Immediately: Serve the ramp pasta immediately, garnished with extra ramps or a drizzle of olive oil, if desired.

Ramps have a short season; if you can't find them, substitute with a mixture of garlic and scallions.
Adjust the amount of capers to your preference; their brininess adds a lovely contrast to the other flavors.
Reserve more pasta water than you think you'll need; it's great for adjusting the sauce's consistency.
For a vegetarian option, omit the bacon and add a pinch of red pepper flakes for a touch of heat.
