In a large bowl, combine the cooked beef mixture and cream of chicken soup. Add the mild Cheddar cheese; stir until well combined. Season generously with salt and freshly ground black pepper to taste. (5 minutes)

In a separate small bowl, combine the panko bread crumbs, 1/3 cup of the Irish Cheddar cheese, and melted butter; mix well. Set aside. (3 minutes)

Coat a 2-quart baking dish with cooking spray. Spread half of the fried potatoes in an even layer in the bottom of the dish. Sprinkle with 1/3 cup of the Irish Cheddar cheese. Cover with half of the beef mixture. Repeat layers with the remaining potatoes, remaining 1/3 cup Irish Cheddar cheese, and remaining beef mixture. Top evenly with the panko bread crumb mixture. (15 minutes)

Bake, uncovered, in the preheated oven until the top is golden brown and the casserole is bubbly, about 30 minutes. Let stand for 5-10 minutes before serving. (40 minutes)

For an extra layer of flavor, try adding a tablespoon of Worcestershire sauce to the beef mixture.
Feel free to substitute other cheeses, such as Gruyere or Monterey Jack, for the Cheddar.
If you don't have panko bread crumbs, regular bread crumbs will work in a pinch.
For a richer flavor, use beef broth instead of condensed cream of chicken soup.
